Sharpham Dairy Rustic Chive & Garlic

Urban myths speak of the day when the cows ate wild garlic, conceiving the idea for this Sharpham favourite. However it came about, the richness of the cheese compliments the savoury herbs and results in a scrumptious guest for any cheese board, or an amazing melted topping for bread, pasta or meats. Works well with the Pinot Gris ‘Wild Ferment’ or alternatively a crisp and fruity West Country cider!

Cheese Making

The chives and garlic are added before the cheese is moulded. After hand moulding into basket moulds, the cheese is drained for 48 hours before being dry salted by hand. As the coat of the cheese grows, it is rubbed by hand to form the thin, natural rind and the cheeses are turned weekly
