Sharpham Classic Cuvée 2020

A more oxidative style of sparkling wine produced in the traditional method and matured on the lees for 19 months. We have built more complexity into the base wine, maturing in French oak and on the lees prior to bottling, which offers up a more savoury style of English sparkling wine.

The colour has an amber hint in the glass and aromas of baked apple, raisin, caramel and bruised peach. The palate is dry and has flavours of red apple and toasted baking spice, with a focussed acidity, soft lees tannin and vibrant mousse.

Wine Making

Whole berry oxidative pressing for 40% of juice, longer hang time in press. Fermentation with natural yeast, 35% left on gross lees, 65% fine lees post fermentation with all parcels kept separate at pressing. 10 months in second-fill oak barrels and one 400L barrel so an overall 25% oak addition Blended before bottling - light filtration. Full malolactic fermentation. Time on lees in bottle is 19 months.
