Sandridge Barton Blanc de Noirs 2021

Made with 100% Pinot Noir from the best parcels, it's fermented naturally with indigenous yeasts in second fill French oak barrels where it spends a further 10 months on gross lees. We bottled this wine for second fermentation in June 2022, where it spent a further 20 months on the lees in bottle. We disgorged this wine with a low 1.25 g/l of residual sugar, making this wine extra brut.

Raspberry gold in colour, with delicate aromas of rhubarb, fresh orchard fruits and cooked apple. The palate is dry, with delicate tart red berry flavours and subtle autolytic characters of baked bread and puff pastry. This leads you into a long finish lifted by the ripe and fruit-driven acidity.

Wine Making

Whole-bunch pressed, left to settle naturally for 48 hours, after which, racked into a range of barrels and stainless steel for fermentation. Wine left in bottle for minimum 20 months before disgorging, with 1.25 g/l dosage.
