Fermentation ticks along gently at 13°C. As it nears the end, we taste regularly—watching for that perfect moment when just a touch of natural residual sugar remains. Then, we chill the tank to just above freezing, halting fermentation and locking in a whisper of sweetness.
The result? A wine that leaps from the glass with elderflower, kiwi, passionfruit, and zesty lime. That vibrant fruit is beautifully balanced by a twist of natural grape sweetness and a bright, limey acidity that keeps everything fresh and lively.
