Sharpham Dairy Rustic Dulse & Sea Lettuce

First made in the early 1990’s at Ticklemore dairy, Rustic production moved to the new Sharpham Dairy in 2003 and has become one of the most popular cheeses in the region. Sharpham Rustic with Dulse & Sea Lettuce is a fresh, rich and crumbly cheese laced with gems of locally hand-harvested seaweed. The addition of seaweed gives a subtle, savoury, umami finish to the classic Sharpham Rustic.

Cheese Making

After hand moulding into basket moulds, the cheese is drained for 48 hours before being dry salted by hand. As the coat of the cheese grows, it is rubbed by hand to form the thin, natural rind and the cheeses are turned weekly.
